Ingredients
  

  • 1 each Baguette sliced 3/4-inch thick
  • 2 cups Cherry Tomatoes halved and sliced, (preferably vine-ripened and local)
  • 1/4 cup Olive Oil plus extra for drizzling
  • 2 tbsp Balsamic Vinegar plus extra for reduction
  • 1/4 cup Balsamic Vinegar for reduction
  • Salt and Pepper to taste
  • 1 cup Fresh Basil Leaves chiffonade cut
  • 2 cloves Garlic minced
  • 4 oz Mozzarella Cheese
  • 4 oz Prosciutto thinly sliced
  • 1/4 cup Pecorino Romano Cheese finely grated

Instructions
 

  • Prepare the Balsamic Reduction: Pour 1/4 cup of balsamic vinegar into a small saucepan. Simmer over low heat until it reduces to about half its volume and thickens. Set aside to cool.

  • Prepare the Tomato Mixture: In a mixing bowl, combine the sliced cherry tomatoes, olive oil, balsamic vinegar, minced garlic, salt, and pepper. Let it marinate for at least 10 minutes.
    2 cups Cherry Tomatoes, 1/4 cup Olive Oil, 2 tbsp Balsamic Vinegar, Salt and Pepper, 2 cloves Garlic
  • Toast the Baguette: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet. Top each with a slice of mozzarella cheese. Toast in the oven for about 5-7 minutes, until the bread is golden and the cheese has melted.

  • Assemble the Bruschetta: On each toasted baguette slice, lay a piece of prosciutto. Spoon the tomato mixture over the prosciutto. Drizzle with balsamic reduction and sprinkle with grated Pecorino Romano. Garnish with a sprinkle of fresh basil.

  • Serve: Arrange the bruschetta on a serving platter and serve immediately.
